Chess Piece Pâtisserie & Café

Chess Piece Pâtisserie & Café established an annual award for students in The Tourism and Culinary Institute of Canada’s Pastry or Culinary Arts programs, who intend to work and live in Atlantic Canada post-graduation.

Patti Hollenberg is the Owner and Executive Pastry Chef at Chess Piece Pâtisserie & Café and holds a double degree in Culinary and Pastry Arts from the Culinary Institute of Canada and sits on the Culinary Advisory Board. Patti spent close to 10 years honing her craft in Western Canada, but as a native of Miramichi, New Brunswick, she always had a dream of moving back to the East Coast and opening a business in her home province. In July 2014, her dream came to fruition when Chess Piece Pâtisserie and Café opened in Downtown Fredericton.

Since its founding, the business has grown to include two locations at the newly renovated Fredericton International Airport, a seasonal house-made ice cream truck that operates as Queen Street Creamery.
